Opa!



Want to take a walk on the wild side? I thought so... how does one do that, you ask? By changing your weekly meal routine and trying something new-like Greek food! Feta, the ingredient found in many Greek meals, is naturally low in fat so this meal is not only delicious but will leave you feeling (and looking) like a Greek goddess. What more could you ask for?

Menu: Keftedes (Meatballs) with Greek Salad and Toasted Whole Wheat Pita:

Ingredients:
1 lb of lean ground turkey meat
1/2 yellow onion-minced
2 cloves of garlic-minced (I buy the minced garlic that stays in the fridge)
1 tsp of white wine vinegar
1/4 Cup of egg beaters (or 1 egg, beaten)
salt/pepper/garlic powder, coriander-few dashes of each

Pita bread-look for whole wheat pita with 110-150 calories/piece and at least a few grams of fiber per serving

Salad:
1 bag of salad mix-I used romaine
1 cucumber-chopped
1 tomato-chopped
1/2 red onion-sliced to form rings
1 package of low fat feta crumbled
1 jar of pepperoncini's
1 bottle of low fat Greek dressing

Other:
Hummus

Instructions:
Pre heat the oven to 375 degrees. Mix the meat, onion, garlic, egg, white wine vinegar, and spices with your hands. Do not overmix. Form into 2" meatballs. In a saute pan, add olive oil (about 2-3 T), and brown the meatballs. Then place them in the oven for 20-25 minutes.

While baking, assemble the salad:
-chopped tomato, cucumber, red onion, pepperoncini, black olives

Serve meatballs with salad and pita and hummus. This can also be a wonderful sandwich combination-or you can just use the pita as a utensil.

***take it one step further and add some feta cheese to the middle of each meatball. (I did this and it was delicious!)

    I love Greek food and am always looking for easy/ quick dinner options - this sounds amazing!

    What Greek dressing do you use? I keep trying different kinds but am having trouble finding one I love.

    Thank you so much for your comments. I used Maple Grove Farms of Vermont-Fat Free Greek dressing and it was good (but you have to like oregano because you can taste it).

    If you want to go the homemade route, try this recipe:
    INGREDIENTS:
    1 1/2 quarts olive oil
    1/3 cup garlic powder
    1/3 cup dried oregano
    1/3 cup dried basil
    1/4 cup pepper
    1/4 cup salt
    1/4 cup onion powder
    1/4 cup Dijon-style mustard
    2 quarts red wine vinegar

    In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.
