Taco, Burrito....


You know the rest...

Tuesday night has become 'taco night' at my house... it's so easy to make, always turns out as you hope, and it's pretty good for you... that is if you use fresh and healthy ingredients like lean ground beef, low fat sour cream and shredded cheese, and as little butter as possible for the corn. It's all about doctoring it up with ingredients like hot sauce, salsa, and spices (that are all free of calories/fat).

-Beef tacos-you can buy the taco seasoning at the store and just add it to browned meat.
-I heat the shells in the oven at 325 for 6-7 minutes
-Corn: clean the corn and add it to boiling water, bring back to a boil and remove after 5 minutes. You can put a little butter on each one (I rub it on there) and sprinkle parmesan, salt, and paprika all over
Toppings:
-low fat (or non fat) sour cream (I put a little hot sauce on mine), guacamole, salsa, shredded cheese (I use low fat cheddar), and chopped tomato and onion and of course your favorite salsa.

Assemble and enjoy.
